4 cups Black beans, cooked and drained
2 cups Pineapple, diced
2 cups Papaya, diced
1 cup Red onion, diced
1 cup Poblano pepper, diced
1 cup Olive oil
1/2 cup White wine vinegar
1/4 cup Mint, fresh, chopped
1/4 cup Sugar
~ Salt and pepper to taste Recipe
Combine all and refrigerate for 2 hours.
Serve with grilled fish.
