3 large tomatoes, diced
1 red or white onion, diced
1 scallion, sliced thin
1 jalapeno pepper, seeded, minced
1 garlic clove, minced
2 to 4 tablespoons chopped fresh cilantro
2 to 3 tablespoons fresh lime juice (1 lime)
1/4 teaspoon salt (optional)
Recipe
In bowl, combine tomatoes, onion, scallion, jalapeno, garlic, cilantro and lime juice; stir gently to mix. Season to taste with salt (if desired). Serve at once or cover and refrigerate for up to 4 days. Makes about 2 1/2 cups.
