1 to 2 Tbs. olive oil
1 large onion, minced
2 cloves garlic, minced
1/4 cup chile powder
1 1/2 14.5-oz. cans diced tomatoes
2 cups tomato juice
1 tsp. ground cumin
salt and pepper to taste

Heat the olive oil in a large saucepan. Add the onion and garlic and cook until transparent. Stir in the chile powder and immediately add the tomatoes, tomato juice, oregano, and cumin. Reduce the heat and simmer for 20 to 25 minutes, stirring occasionally, until ingredients are combined, thickened, and flavorful. Adjust salt and pepper to taste.
Note: This is a chunky sauce and is quite mild. If you prefer a spicier sauce, add 1 poblano chile, roasted, peeled, and diced, or 2 jalapeño chiles, minced.
