    1 white onion, cut into 1/8-inch dice

    6 plum tomatoes, cut into 1/4 inch dice
    1/4 cup beer
    2 large serrano chiles, cut into 1/8 inch dice
    2 garlic cloves, minced
    2 Mexican limes, juiced
    1/4 cup fresh cilantro leaves, chopped
    1 tsp sugar
    2 tsp kosher salt

    Recipe



    Place the chopped onions in a strainer, rinse with hot tap water, and drain.

    Combine all ingredients, except salt, no more than 1 hour before serving. Mix well. Chill 30-60 minutes.

    Add salt when serving. Serve with tortilla chips, lime wedges, and iced cold beer.
