3 medium tomatoes, fully ripened
4 smallish cloves of garlic
3 dried pimentos
10 toasted almonds
1 slice heavy bread fried in oil
a pinch of white pepper
1 cup best quality olive oil
10 tbs vinegar
table salt
Recipe
Roast the tomatoes, the garlic and the pimentos in the oven, taking care not to burn them. Remove the seeds from the pimentos, then grind them together with the almonds in a mortar. Peel the garlic and add to the pimentos and almonds. Remove the skins and seeds from the tomatoes and add. Crumble the bread (already fried in oil) into the other. Add a pinch of ground white pepper. Blend well with the pestle while adding the oil, vinegar and a pinch of salt. Let the mixture stand for a couple hours, then strain it and beat vigorously.
This sauce is used primarily for fish or cooked vegetables
