Sweet-And-Sour Bacon Sauce

5 slices bacon, diced
1 large onion, minced
4 tbs flour
1 cup water or stock
3 cloves
salt, vinegar and sugar to taste

Fry bacon in a skillet until half cooked. Add minced onion and saute slowly until bacon is brown and onion is deep golden. Remove bacon and onion and reserve. Sprinkle flour into bacon fat. Saute slowly, stirring constantly, until mixture is light brown. Add cold water or stock, stirring constantly, so that the sauce remains smooth. Return fried bacon and onion to sauce. Add cloves and simmer 20 minutes. Add salt to taste and season with vinegar and sugar until sauce has an even half sweet, half sour flavor. Serve over poached or hard cooked eggs, or over string beans.
VARIATIONS:
Add 1/2 cup raisins to sauce and serve over boiled tongue, steamed or stuffed cabbage.
