7 egg yolks
1 egg
1 tsp. Tabasco
1 tsp. lemon juice
16 oz. clarified butter
salt and pepper to taste
� c. parsley
� c. tomato reduction (optional: substitute a high-quality tomato paste)
Recipe
In a blender, whip yolks, lemon juice and Tabasco until frothy.
Drizzle butter into blender in a slow, steady stream. When the mixture becomes thick, add the whole egg.
Pour into a mixing bowl and fold in tomato reduction and the parsley.
