    Tomato Sauce with Zucchini and Meatballs

    For the Sauce:
    2 quarts tomato sauce
    1 medium zucchini, cut in one-inch chunks
    ½ onion, chopped fine
    2 Tbs olive oil
    3 cloves garlic
    1 Tbs fresh basil (or 1 tsp dry)
    4 Tbs red wine

    For the Meatballs:
    1 pound ground beef
    1/3 cup dry bread crumbs
    1 egg
    1 clove garlic, crushed
    1 tsp Italian seasoning
    ½ tsp salt

    Recipe



    Start simmering tomato sauce in large sauce pot.

    Chop zucchini and onion and mince garlic.

    Saute´ onion and garlic for 5 minutes. Add zucchini and basil and saute´ 5 minutes longer.

    Add sauteed vegetables along with red wine to tomato sauce and continue to simmer.

    For Meatballs:

    In mixing bowl, beat egg and add all remaining ingredients. Mix well. (Hands work best.)

    Form meatballs and drop into cooking sauce. Simmer together for at least one hour.
