    Tomato and Shallot Relish

    3 medium-sized ripe tomatoes, peeled, seeded and coarsely chopped
    5 large shallots, finely chopped
    2 teaspoons chopped fresh thyme leaves
    Freshly ground black pepper
    1/4 cup red wine vinegar
    1/3 cup olive oil
    Coarse salt

    Place the thyme and the freshly ground pepper in a mixing bowl. Whisk in the vinegar, then the olive oil. Stir in the tomatoes and shallots. Season with salt to taste, and additional pepper, if needed.

    Makes about 2-1/2 cups
