Watermelon and Peach Salsa

List of Ingredients
2 cups fresh, sweet watermelon, seeded and finely diced
1 1/2 cups fresh sweet peaches, skinned, pitted, and finely chopped
1 cup finely chopped fresh tomato
1 small red Bermuda onion, finely chopped
1–2 red jalapeno peppers, very finely chopped
1 clove garlic, finely minced
3 tablespoons finely chopped fresh cilantro
1 1/2 teaspoons finely chopped fresh mint
1 tablespoon dried oregano leaves
½ teaspoon dried ground cumin
3 tablespoons seasoned rice vinegar*
1 tablespoon extra virgin olive oil
1 teaspoon salt, or to taste
Recipe
Prepare all of the fresh ingredients as indicated. It is best if these ingredients are all hand minced or chopped instead of processing in a food processor.
In a large mixing bowl, combine all the ingredients, and mix well. Taste for proper seasoning and adjust as desired. Cover with plastic wrap and place in the refrigerator to chill until serving. Makes just over a quart.
Note: If you prefer less sweetness, use regular rice vinegar in place of seasoned vinegar.
