Chicken Mixture:
2 tbsp butter
1 bunch scallions, chopped
1 yellow pepper, chopped
couple cloves garlic, minced
2-4 fresh jalepenos, seeded and diced
1/2 tsp grated fresh ginger
1/2 tsp salt
1/2 tsp ground sage
1/2 tsp cumin
2 boneless chicken breasts, cut into bite-sized pieces
Sauce:
3 tbsp butter
1/4 cup flour
2 cups cream or milk or combination
2 cups chicken broth
17 oz can of corn, drained
2-4 cans great northern beans, drained
Recipe
To make chicken mixture, melt butter in 5 qt pan. Saute scallions, yellow pepper, garlic, jalepenos, ginger, salt, sage and cumin. Add chicken and cook until just done. Remove mixture and set aside.
To make sauce, in same pan, melt butter over med low heat. When bubbling whisk in flour until smooth - cook for 3 min stirring constantly. Remove from heat and slowly whisk in cream until smooth. Whisk in chicken broth and return to med heat. Add corn, beans, and chicken mixture. Simmer on low about 30 minutes.
Top each bowl w/ a pinch of cayenne and some grated Monterey Jack cheese. Serve w/ warm corn tortillas.
