2C potatoes - cut into 1" cubes
2C zucchini - cut into 1" cubes
1/4C fresh cilantro, washed and minced
1C crushed canned tomatos (fire-roasted, if you can get them) OR 1 8 oz. can tomato sauce
8C boiling water
1 lb. ground beef
1 egg
salt & pepper to taste
1C cooked, day-old rice
1 large onion, diced
2C chopped carrots
Recipe
1. Mix beef, egg, salt & pepper, onion, cilantro and rice. Form into meatballs, and drop into boiling water to which tomatoes (or sauce) have been added. Cook for 5 minutes.
2. Add potatoes and simmer for 15 minutes.
3. Add zucchini and carrots, and simmer 15 minutes more.
4. Serve with hot corn or flour tortillas.
