Avocado Gazpacho

¼ cup unsalted butter
1 tablespoon olive oil
1 onion, chopped
1 English cucumber, peeled and chopped
2 cloves garlic, minced
1 jalapeno pepper, seeded and chopped
3 avocados, peeled, pitted and chopped (ripe but still a little firm)
3 tablespoons chopped fresh cilantro leaves
2 cups heavy cream
Salt and pepper to taste

Recipe
Melt butter in medium saucepan. Add olive oil. Sauté onion, cucumber, garlic and jalapeno pepper for 10 minutes, or until softened. Add avocados and cilantro. Sauté for 5 minutes.
Puree mixture in food processor or blender. Transfer to bowl. Mix in heavy cream. Season with salt and pepper to taste. Add hot pepper sauce to taste. Chill for at least 2 hours.
To serve, garnish with a dollop of sour cream, additional cilantro leaves and a sprinkling of cayenne pepper, if desired. 4 to 6 servings.
