Bear Trail Soda Ham & Cheddar Chowder

1 c. diced cooked ham
1 c. chopped carrots
1 c. chopped onion
1 potato peeled and cubed
1 stick butter
salt and pepper to taste
water
1 c. milk
1/2 c. flour
2 c. grated sharp or medium cheddar cheese
1/2 c. beer
Recipe
Put ham, carrots, onions, potatoes and butter in soup pot or Dutch Oven. Season with salt and pepper. Add enough water to cover. Bring to a boil and let it go for an hour at high temperature. Add more water if necessary. Turn heat to medium.
In blender; mix milk and flour until blended. Pour in soup and stir in, let thicken slightly. Add cheese and beer. Stir until cheese melts. Simmer for 10 minutes.
(Great use for left over Easter ham. I've used regular ham or honey glazed spiral sliced ham. This recipe came from the Bear Trail Soda Shop in North Carolina. It was a small restaurant about a block from the county courthouse in the mountains of western North Carolina. We were covering a trial up there and ate there several times over a couple of weeks. I loved this soup and coaxed the recipe out of the owner on our last day up there. I also got a recipe for a Toll House Pie that the videographer working with me loved. I'll share that some time too.
