Beef Goulash Soup

List of Ingredients
2 tbs. Canola Oil
1 1/2 lb. Prime Rib (leftover)
1 lg. Red Onion, dice
3 Cloves Garlic
3/4 tsp. ground Cumin
2 tbs. Hungarian Paprika
3 tbs. all-purpose Flour
5 cups Beef Stock
2 large Potatoes, peeled
1 (14oz) can Tomato in puree
Salt and Pepper to taste
6 tbs. Sour Cream
Recipe
Heat a large sauce pan and add beef. Stir and add onions. Brown, add garlic, cumin and paprika, stir and cook one minute, add flour, stir and cook one minute, add 1/2 of the stock and stir. Bring to simmer and add remaining stock. Simmer covered until beef begins to get tender, approximately 1 hour. Cut potatoes into small cubes and add with tomatoes to pot, simmer until tender, about 20 minutes. Serve and garnish with sour cream.
