Beefy Cheddar Soup

1 pound ground or chopped beef (see note)
3/4 cup chopped red onion
1 1/2 tablespoons chopped garlic
1 tablespoon ground caraway (see note)
2 teaspoons dried oregano, crumbled
1 bay leaf
3/4 cup (6 ounces) Budweiser beer
4 cups beef stock (see note)
3 1/2 tablespoons cornstarch
1/3 cup water
8 ounces shredded mild Cheddar cheese, plus extra for garnish
1/4 teaspoon ground white pepper
Seasoned croutons, for garnish
Sliced green onions, for garnish
Recipe
Brown beef with red onion in stockpot. Stir in garlic, caraway, oregano and bay leaf. Add beer; simmer 10 to 15 minutes.
Add beef stock; simmer for 20 minutes. Remove bay leaf. Dissolve cornstarch in water; stir into soup, using as much as needed to thicken to desired consistency. Stir in 8 ounces cheese. Add white pepper; taste and adjust seasonings.
Ladle into bowls; garnish with additional Cheddar, croutons and green onion.
Yield: 6 1/2 cups soup.
Note: Use chopped tenderloin and prime sirloin or ground trimmings from other steaks. If you can't find ground caraway, crush caraway seeds in a blender or mini processor, but don't omit this important flavor element. Instead of homemade beef stock, you can substritute 1 (14-ounce) can beef broth, 1 (10-ounce) can condensed beef broth, plus 1 (10-ounce) can water.
