Blazzing Saddles Chili

List of Ingredients
1 pound lean ground beef about 10% fat
6 cloves of garlic, minced
1 small onion, diced
salt and pepper to taste
Sauté the onion and garlic for a couple of minutes them add the ground beef. Cook until the meat is fully cooked and starting to brown, drain excess fat into a colander and return the mixture to your skillet. I use a large deep non-stick skillet or use a four quart sauce pan.
Add:
2 small cans of tomato soup, add a little water to rinse the can clean and pour into mixture
1 16oz can of tomato sauce
2 cans of Red Kidney beans, drain the juice and discard (you may like less beans)
2 tablespoons of Chili Powder
¼ teaspoon of ground cumin
1/8 teaspoon of cayenne pepper
salt to taste
a splash of Worcestershire sauce and Tabasco sauce, optional
Simmer uncovered for about 45 minutes on very low heat, stir frequently. Serve with grated cheddar cheese, chopped onions, and pepperoncini peppers.
