    2 Granny Smith apples, peeled and chopped
    1 large onion, peeled and chopped
    2 servings cooking spray (2 seconds of spray)
    2 large sprinkles Mrs. Dash seasoning (1/2 teaspoon)
    1 large bunch (1 1/2 pounds) broccoli, cauliflower, or carrots
    1 46-0unce can Swansons (or any other brand) vegetable broth

    Sauté apples and onion sprinkled with Mrs. Dash in a nonstick frying pan lightly coated with cooking spray. Set aside. Clean, scrub, and chop the vegetable, including stalks, into 1-inch pieces. Steam or parboil. Add all ingredients to broth and simmer for 10 minutes. Pour into blender and purée.

    Suggestions :
    May be served cold with a dab of lowfat cottage cheese in the center. Garnish with parsley in winter, mint in summer.
