2 pounds lean ground beef
1 cup onion, finely chopped
1 cup celery, finely chopped
2 garlic cloves, minced
1 1/2 cups carrot (about 3 medium carrots), chopped
6 ounces green beans, cut into 1-inch pieces
6 ounces button mushrooms, sliced
3 14-ounce cans chopped tomatoes
1 cup beef broth
1 teaspoon salt
1/2 teaspoon black pepper (optional)
1 8-ounce can corn kernels, drained
Recipe
Place the ground beef in a Dutch oven and add the onion, celery and garlic. Brown the meat over medium. Skim the fat from the pan if necessary. Stir in the carrots, green beans, mushrooms, tomatoes, beef broth, salt and pepper. Bring the mixture to a boil, stir and cover. Reduce the heat to low and simmer the stew for 30 minutes, stirring occasionally. Stir in the corn, cover and continue cooking for about 10 minutes more, or until the vegetables are tender. Serves 8.
