Chilled Shrimp Soup

List of Ingredients
2/3 pound cooked shrimp (frozen is fine)
2/3 of a seedless cucumber (English), peeled and roughly chopped
1/4 cup sweet onion roughly chopped (Vidalia or similar)
or
3 tablespoons scallions
2 tablespoons Dijon mustard
2 teaspoons sugar or other sweetener
3 teaspoons dry dill
or
2 tablespoons chopped fresh
3 cups buttermilk
(pickled beets)
Recipe
Put all ingredients except about 2 cup of the buttermilk in blender or food processor and puree. (The shrimp can be pureed while still frozen.) Add the remaining buttermilk and taste for seasoning.
Garnish this with finely diced pickled beets.
If all you have is raw shrimp, cook them in a little vermouth and adding the vermouth to the soup.
