Cream of Zucchini Soup

List of Ingredients
4 T. chopped scallions, including tops
2 garlic cloves, minced
2 lbs. zucchini, sliced thin
4 T. butter
1 T. curry
1 t. salt
1 c. heavy cream
4 c. chicken broth
Recipe
In a tightly covered pan, simmer onion, garlic and zucchini in butter until barely tender, about 10 min. Stir often to prevent burning. Put mixture in a food processor with enough broth to blend until smooth. Put back in soup pan and add remaining ingredients. Simmer until hot enough to serve. Makes 4 to 6 servings.
