    Cream of Zucchini and Cucumber Soup

    3 medium-sized zucchini, sliced
    1 medium-sized cucumber, seeded and drained
    3 celery stalks, sliced
    2 scallions including greens, sliced
    3 cloves garlic, minced
    4 to 5 C. chicken broth
    fresh herbs in season: parsley, dill, thyme, etc.
    salt and pepper to taste
    1 C. heavy cream, sour cream or evaporated milk

    Recipe



    Simmer zucchini, cucumber, celery, scallions, and garlic in broth with herbs until soft. Puree mixture in a blender or food processor in batches. Season to taste and stir in cream.
    Serves 6. delicious warm or cold.

    Note: For texture, add some chopped raw zucchini or cucumber.
