    1 large onion, chopped
    1 medium green pepper, chopped
    3 cloves garlic, minced
    2 tsp. cooking oil
    1-1/2 tsp. ground cumin
    1/2 tsp. paprika
    1/8 to 1/4 tsp. ground red pepper
    1-1/2 C. water
    2 C. chicken broth
    2 C. whole kernal corn (10-oz. frozen pkg.)
    2 T. snipped fresh oregano
    1 15-oz. can garbanzo beans, rinsed and drained
    1 medium tomato, chopped
    2 T. lemon juice
    1/4 C. crumbled feta cheese (optional)
    2 T. thinly sliced green onion

    Recipe



    In a large covered saucepan cook onion, sweet green pepper, and garlic in hot oil until onion is tender, stirring occasionally. Stir in cumin, paprika, and ground red pepper; cook for 1 minute.

    Carefully add the water, chicken broth, corn, and oregano. Bring to a boil; reduce heat. Simmer, covered, for 5 to 10 minutes or until corn is tender. Stir in beans, tomato, and lemon juice. Heat through. Ladle into serving bowls. Sprinkle each with feta cheese (if desired) and green onion.

    Makes 6 cups.
