    2 pounds pork stew meat, cut into 1-inch cubes
    2 tablespoons vegetable oil
    1 large onion, chopped
    1 teaspoon chopped garlic
    2 cups frozen chopped New Mexico green chile
    2 large tomatoes, peeled and chopped
    2 potatoes, peeled and diced
    1/2 teaspoon ground cumin
    3 cups chicken or beef broth
    Salt to taste

    Recipe



    In a saucepan, brown the pork in the oil. Add the onions and garlic and sauté until the onion is soft. Remove the meat and onion minture from the pan. Add 1 cup water to deglaze the pan.

    Combine the pan drippings and the rest of the ingredients in a large pot or Dutch oven, bring to a boil, reduce the heat, and simmer for 2 hours, or until the meat is very tender and starts to fall apart.

    Yield: 6 servings
