Guinness Beef Stew

5 lb. beef stew meat
1 carrot
1 sm. onion
1 stalk leek
2 stalks celery
2 med. potatoes
1 c. flour
1/4 c. tomato paste
2 qt. beef stock
1 c. red wine
1/2 c. guinness
2 tsp. salt
1 tsp. pepper
Recipe
Sauté beef and vegetables. Return meat to vegetables after sautéing, add flour, tomato paste, mix together and cook for 2 minutes, add wine, guinness and mix well, add beef stock and let this all come to a simmer, then reduce heat and cook until carrots are tender, about 1 hr. While this is cooking, cook potatoes off separately. When potatoes are finished season with salt and pepper.
