    1 onion
    2 tbs. butter
    1 tbs. oil
    6 medium potatoes, diced
    2 large stocks of celery
    1 - 2 cups diced ham
    3 tbs. flour
    1.5 t. salt
    1.25 t. pepper
    3.5 cups milk

    Recipe



    1. Saute onion in butter & oil. Add potatoes and stir to coat with butter.

    2. Cook slowly, stirring to prevent sticking. Add chopped celery.

    3. Cover and cook 10 minutes but don't brown.

    4. Add ham & cook for 10 minutes until veggies are done.

    5. Remove from heat & stir in flour, salt and pepper. Then add milk one cup at a time.

    6. Bring to simmer, covered for 15 - 20 minutes. Do not boil.
