Hearty Cheddar Chowder

4 medium potatoes, peeled and diced
1 medium onion, finely chopped
1 cup thinly sliced carrot
3 cups chicken broth
1/3 cup butter
1/3 cup flour
3 1/2 cups milk
4 cups grated sharp Cheddar cheese
Recipe
In a large soup kettle, combine potatoes, onion, carrots, and broth. Cover and simmer 15 minutes or until vegetables are tender.
In a small saucepan over medium heat, combine butter and flour. Gradually add milk, stirring constantly until thickened. Add cheese and stir until melted.
Stir cheese sauce into vegetable mixture. Do not boil.
