Hold-Your-Colo Chili

List of Ingredients
2 T olive oil
1 c chopped onion
1 green bell pepper, coarsely-chopped
1/2 c dry red wine or red cooking wine
1 can diced tomatoes with liquid
1 can black beans, drained and rinsed
1 can red kidney beans, drained and rinsed
1 can pinto beans or white northern beans, drained and rinsed
Water
In a separate bowl, pre-mix the following items:
4 t chili powder
1 t garlic powder
1 t ground cumin
1 t oregano
1 t basil
2 t sugar
1/2 t salt
1/2 t pepper
Heat oil in a large saucepan or dutch oven. Add chopped onion and green pepper, and reduce heat to medium-high. Cook onion and pepper for five minutes, or until vegetables are soft, stirring often. Add the wine, tomatoes and all three types of beans. Stir well. If there is not enough liquid, add water as needed, but only one cup at a time. Increase heat to high. Stir the dry ingredients into the chili and mix well. Bring chili to a boil, but reduce heat to a simmer once the chili begins rolling. Simmer for twenty minutes, stirring occasionally.
