    6 (15.8 oz.) cooked Great Northern White Beans (juice drained, equals 64 oz. of beans)
    2 lbs. boneless chicken breasts, cooked and diced
    1/2 c. water
    2 tbsp. Olive Oil
    2 med. onions chopped small
    2 (4oz.) cans chopped mild green chilis
    2 tbsp. ground cumin
    1 1/2 tsp. dried oregano
    1/4 tsp. cayenne pepper
    1/2 tsp. salt
    6 c. chicken broth or stock
    3 c. grated Monterey Jack Cheese, cheddar or cojack (of combo of any of the cheese as a garnish)

    Place oil in a sauté pan. Sauté off onions and chicken, The onions will become clear and the chicken needs to be cooked thoroughly. (165° degrees) cool off chicken and onions. Dice up chicken to bit size pieces. In a medium stock pot, add all the remaining ingredients. Place in onions and chicken. Mix all together and let cook. You want all the flavors to blend together and all parts of the chili to be hot. Cook over medium heat stirring occasionally about l hour or until bean are tender. Cheese can be added to the stock pot, or place on top of the chili in your serving bowl.
