Mucho Frijoles Soup

List of Ingredients
2 c Dried Beans (black, kidney,-garbonzos, or a mix)
1 1/2 ts Salt
1 lg Onion, chopped
1 cl Garlic, crushed
1 1/2 lb Meaty Ham Hock
2 c Chopped Fresh Tomatoes
1 Jalapeño Pepper, chopped
3 tb Fresh Lemon Juice
1 ts Fresh Ground Black Pepper
2 c Chicken Stock
Recipe
Wash beans and put in a large stockpot. Add water to cover and add salt.
Soak overnight.
Drain and add remaining ingredients. Simmer over low to medium heat for
3-4 hours or until tender. Remove ham hock. Pick meat off bone and return
meat to pot. Discard bone and fat. Soup is ready to serve.
