Mushroom Bisque

List of Ingredients
1 lb. fresh mushrooms
1 qt. chicken broth
1 med. onion, chopped
6 T. butter
6 T. flour
3 C. milk
1 C. heavy cream
1 tsp. or more salt
white pepper
Tabasco sauce
2 T. sherry, if desired Recipe
Chop mushrooms very fine. Simmer, covered in broth, with chopped onions, about 30 minutes.
Melt butter in a saucepan, add flour and stir with whisk until blended. Meanwhile, bring milk to a boil and add all at once to flour mixture, stirring vigorously until sauce is thick and smooth. Add cream. Combine mushroom broth mixture with sauce and season to taste.
