2 medium finely chopped onions
2 Tbsp olive oil
7 cloves minced garlic
1/2 of (3 oz) bottle blended chili powder
1/2 oz dark chili powder
3 lbs cubed or coarse ground prime beef
1 can beef broth
1 can beer
3 oz pork sausage
1 med can, minced green chilies
1/2 tsp hot New Mexico chili powder
3 Tbsp ground cumin
4-6 oz tomato sauce
1 dash cayenne pepper
1 dash hot pepper sauce
salt/white pepper
Recipe
Saute onions in oil till opaque. Add garlic & saute 2 mins more. Stir in blended and dark chili powders, mixing well.
Cook beef in separate skillet, one pound at a time, just until meat loses its pink color. Add extra oil, if necessary. Add meat to onion mixture w/enough beef broth to keep from sticking. Season to taste with white pepper. In a skillet, saute sausage & green chilies together for 2 mins. Add to the onion-beef mixture with New Mexico chili powder and mix well. Let cook over medium heat about 15 mins, stirring occasionally. Add remaining broth, cumin, tomato sauce and enough beer to keep mixture from sticking to pan.
Cover & cook 2 hours, stirring occasionally. Add more broth or beer, as needed. Twenty mins before done, season to taste w/salt, cayenne, pepper sauce & salt.
