2lbs. ground beef
1 large yellow onion
3 fresh jalapenos
4-5 cups V-8 juice
28-32 oz. canned diced tomatoes
32 oz. canned kidney beans
2 Tbl. chilli powder
1 Tbl. cumin
1/2 tsp. oregano
1/4 tsp. garlic powder
1/4 tsp. salt
4 fresh cayenne peppers
1 cup cooked macaroni
Recipe
Step1: Brown and drain ground beef. Add canned tomatoes, onion (chopped), and jalapenos (finely chopped). Simmer for 20-30 minutes.
Step 2: Add V-8 juice, kidney beans, seasonings, and cayennes. You need to make a slit
lengthwise in the cayennes. Simmer for 2-3 hours.
Step3: Remove cayennes from chilli, and add macaroni. Simmer for 15-20 more minutes.
Serve topped with sharp cheddar cheese.
For a little extra taste, add 2 whole bay leaves when adding seasonings.
