    Yeild 48 - 4oz. servings (1 1/2 gal.)

    2 lb. butter or margarine
    1 med. yellow onion - diced
    1 stalk celery - diced
    4 c. flour
    4 qts. chicken stock
    4 c. shredded swiss cheese
    2 c. drained saurkraut (1lb. pkg.)
    2 c. chopped corn beef
    3 tbs. caraway seeds
    4 qts. half-n-half
    1-2 c. thousand island dressing

    Recipe



    While butter or margarine is melting in large stockpot add diced celery and onion, cokk until translucent. Stir in flour to make a roux, add heated/hot chicken stock, add swiss cheese, saurkraut, caraway seeds and corn beef, stir until is melted then add thousand island dressing, enjoy!
