    Savory Tomato Soup

    List of Ingredients




    In a large pot saute on medium heat in 2 tsp. olive oil:

    1/2 Cup each of red onion,
    red pepper,
    yellow pepper,
    carrot and celery,
    1 C. shredded savory cabbage,
    2 C. diced tomato,
    1 T. minced garlic,
    Cook until cabbage softens (6-8 minutes).

    Season:
    1/4 C. balsamic vinegar
    2 tsp. dried basil
    1 tsp. tarragon
    1/2 tsp. salt
    1 bay leaf

    Blend:
    1 5-oz. can tomato paste
    4 C. stock or water
    2 C. tomato juice

    Simmer gently for 15 minutes.

    To finish add:
    1 C. bite-size broccoli florets
    1 C. cooked fusilli pasta

    Serve with croutons and grated Parmesan.
