Fish Fumet 1 cup
Heavy Cream 1 1/2 cup
Butter 2 Tblsp.
Plum Tomatoes 2
Leek-sm. dice 8 oz
Potatoes-sm. dice 8 oz
Coho Salmon Fillets 12
White Wine 2 oz
Bacon 2 oz
Dill 1 oz
Recipe
1. Render bacon and reserve.
2. Reduce cream by half and heat fumet.
3. Sauté leeks and cream and fumet.
4. Smoke salmon until desired, finish in oven.
5. Add potatoes cook until tender then add concasse tomatoes.
6. Adjust Seasonings and garnish with chopped dill.
