    Southwestern Chicken Chili Santa Fe

    3 boneless, skinless chicken breast, diced
    1 can (14.5 oz.) diced tomatoes with green peppers and onions
    2-3 T. chili powder (or to taste)
    1 small can tomato sauce
    1 can (15.25oz.) black beans or kidney beans, drained
    1 can (15.25 oz) whole kernel corn, drained

    Combine chicken, tomatoes, and chili powder in medium saucepan. Cook over medium heat for 5 minutes or until chicken is done and sauce is slightly thickened. Add remaining ingredients and simmer 5-7 minutes or until heated through. Garnish with a dollop of sour cream sprinkled with shredded Monterey Jack cheese, diced avocado, or green onions. Note: I use Green Giant Mexicorn with red and green peppers. When I double this recipe, I use only one can of beans.You can also give it some heat with pepper sauce to taste.
