    1/4 lb round barley
    1 cup cubed carrots
    1/4 cup diced celery
    1 cup diced white onion
    1/4 cup cubed ham
    3 cloves minced garlic
    1/2 diced red pepper
    1/2 diced green pepper
    1/2 cup chopped parsley
    1 Tbsp ground black pepper
    1 tsp basil
    1 tsp oregano
    1 tsp chives
    2 Tbsp vegetable oil
    2 1/2 qts chicken or beef broth

    Instructions:
    Soak barley in a bowl of water to cover for at least 3 hours; drain and rinse. In a large pot, heat oil, add carrots, garlic, celery, onion, ham, red pepper, green pepper and drained barley and stir together for three minutes. Add chicken broth and black pepper and cook for 1 hour. Add basil, oregano and chives and cook 15 more minutes. Ganish with chopped parsley and serve hot.
