    Terrific Meatball Minestrone Soup

    2 (14.5 oz. each) cans chicken broth
    1 (14.5 oz.) can beef broth
    1 (1 lb.) bag frozen mixed vegetables
    1 (18 oz.) bag frozen meatballs
    1 (14.5 oz.) can stewed tomatoes
    1/2 cups dried macaroni noodles
    1 (15 oz.) can light red kidney beans
    1 1/2 teaspoons dried Italian seasoning
    Parmesan cheese (as desired for garnish)

    Pour the chicken and beef broth into a 4.5-quart soup pot and heat on high. Add the frozen vegetables, meatballs, tomatoes and macaroni. Cover the pot and bring it to a boil.

    While the soup is heating, rinse and drain the kidney beans and set aside. When the soup comes to a boil, uncover and stir well. Add the kidney beans and Italian seasoning, and reduce the heat to medium. Stir frequently until the macaroni is tender (another 6 to 7 minutes). Top servings with Parmesan cheese as desired.
