    Tomato & Blue Cheese Soup

    1 tb unsalted butter
    1 onion coarsely chopped
    2 garlic cloves minced
    1 tb all purpose flour
    3 lbs ripe tomatoes, peeled seeded & chopped
    4 cups unsalted chicken stock
    1 lb blue cheese crumbled
    2 tb tomato puree
    8 basil leaves chopped
    Salt & pepper to taste

    Melt butter in large saucepan at Med. Low heat. Add onion & garlic & cook until onion is translucent, stirring ocassionally. Add flour & stir 2 minutes. Add tomatoes, stock, cheese, puree, basil, salt & pepper and bring to boil. Reduce heat & simmer until slightly thickened, stirring occassionally (2 hours). Strain soup through fine sieve into saucepan, then rewarm gently. Ladle into heated bowls. Serve immediately.
