Turkey, Cheddar and Corn Chowder

4 tablespoons butter
3 tablespoons flour
2 ½ cups milk
2 ½ cup chicken broth
1 large Idaho potato, diced
1 ½ packed cups shredded sharp cheddar
1 ½ cups drained corn
1 ½ cups cooked and cubed turkey
Cayenne and black pepper to taste
Recipe
Melt 4 tablespoons butter in a 3 quart saucepan, when bubbling, add 1 cup minced yellow onion. Saute. Add 3 tablespoons flour. Cook flour 1 minute. Stir in 2 ½ cups milk and 2 ½ chicken broth and bring to a simmer. Add 1 large Idaho potato, cut into small dice and let cook until just tender (about 7 minutes), at a constant low simmer, with the cover ajar. Add 1 ½ (packed) cups shredded sharp cheddar cheese and stir until the cheese melts (add some cayenne and black pepper for a nice bite). Add 1 ½ cups drained corn and 1 ½ cups cooked and cubed turkey and cook until piping hot throughout. Serve, sprinkled with fresh chives a little crisp bacon.
