Vegetable Cheddar Chowder

2 tablespoons of reduced calorie margarine
1 cup of diced zucchini
1/2 cup of chopped onion
1/2 cup of diced green bell pepper
1/4 cup of thinly sliced carrot
2 tablespoons of all purpose flour
1 cup of shredded low fat Cheddar cheese
3 cups of skim milk
A dash of ground black pepper
In a medium saucepan, melt the margarine. Add the zucchini, onion, pepper and carrot and sauté until the onion is tender, about 4 -5 minutes. Stir in the flour, cook and stir for 1 minute. Gradually stir in the milk, cook and stir until the mixture boils and thickened. Blend in the Cheddar cheese and black pepper, heat and stir until the cheese melts. Serve hot. Makes 4 servings.
