West Texas All Beef Chile

List of Ingredients
6 pounds beef - Any lean non-tender cut is fine
3 pounds onions
4 tablespoons chile powder
2 tablespoons ground cumin
4 teaspoons of crushed garlic
1 bottle beer
1 cup water
2 tablespoons Hungarian paprika
Jalapeno chiles - fresh or powdered (Texas Gunpowder or equivalent)
Salt
Black pepper
Recipe
Cube beef (1/2 to 3/4 inch) and brown in small amount of oil with a few skaes of salt and pepper; move to large pot
Chop onions and saute in oil until golden; add to beef
Add chile powder, cumin, paprika, garlic, 1 teaspoon salt, beer and water
Simmer over very low heat for at least two hours.
Add jalapenos (as much as you can stand!)
Best when left overnight in the refrigerator and reheated
Great stright-up or as Frito Pie (over corn chips with cheese, onions, sour cream)
