White Bean Pot

2 cups dried Great Northern beans
7 cups water
3/4 pound smoked ham, cubed
4 carrots, scraped and diced
1 large tomato, peeled and coarsely chopped
1 large onion, chopped
3/4 cup chopped fresh parsley
1/4 cup chopped celery
1 clove garlic, minced
1 small bay leaf
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1/8 teaspoon dried whole thyme
1/8 teaspoon whole marjoram
Pinch of ground cloves
1 pound knockwurst, or smoked sausage, cut into 1/4-inch slices
1 tablespoon butter or margarine, melted
Sort and wash beans; place in a large Dutch oven. Add water, and bring to a boil; cook 2 minutes. Remove beans from heat; cover and let soak for 1 hour.
Return to heat; bring to a boil, reduce heat, and simmer 1 hour. Add ham, carrots, tomato, onion, parsley, celery, garlic, bay leaf, salt, pepper, paprika, thyme, marjoram, and cloves; stir well. Bring mixture to boil; cover, reduce heat and simmer 25 minutes or until vegetables are tender, stirring occasionally. Remove bay leaf.
Brown knockwurst or sausage in 1 tablespoon butter in a skillet; stir into bean mixture.
Makes about 3-1/2 quarts
