    Yukon Gold Potato and Chive Soup

    4 c. chicken broth
    3 c. water
    2 1/2 lbs. Yukon Gold Potatoes, peeled and diced (to equal about 7 cups)
    3 large cloves garlic, peeled and coarsely chopped
    1 1/2 tsp. salt
    2/3 c. half and half
    1/4 tsp. freshly ground black pepper
    1/2 c. minced fresh chives

    In a large pot combine the broth, water, potatoes, garlic and salt. Bring to a boil. Reduce heat to medium, cover and simmer until potatoes are very tender, about 30 minutes.
    Working in batches puree the soup in a blender or food processor until smooth. Return to pot. Add half and half and bring to a simmer. Stir in the pepper and chives. (The soup can be prepared 1 day in advance. Cool, cover and refrigerate. Rewarm slowly over low heat, stirring frequently.)

    Makes 6 servings.
