Champagne Jello Ring

2 cups boiling water
3 packages (4 serving size) Lemon Flavored Gelatin (Such as Jell-O)
2 cups cold Champagne
1 cup cold Ginger Ale
Stir boiling water into Gelatin in large bowl until completely dissolved. Let cool for approximately 10-15 minutes. Very gently stir in Champagne and Ginger Ale. Pour into a 6-cup mold.
Refrigerate at least 4 hours.
For a non-alcoholic version...leave out the champagne and use 3 cups cold ginger ale.
