    Corn and Roasted Peppers Salad

    Use any combination of red, orange and green peppers in this zesty salad.

    List of Ingredients




    2 cups fresh corn kernels (about 4 ears)
    1 cup chopped roasted bell peppers (see recipe)
    2/3 cup chopped seeded plum tomato
    1/4 cup minced shallots
    2 tbsp. finely chopped fresh flat-leaf parsley
    2 tsp. minced seeded jalapeno pepper
    1/2 tsp. grated lime rind
    2 tbsp. fresh lime juice
    2 tsp. extra-virgin olive oil
    1/2 tsp. salt
    1/8 tsp. black pepper

    Combine corn, peppers, tomato, shallots, parsley and jalapeno in a large bowl.

    Combine lime rind, lime juice, olive oil, salt and pepper in a small bowl, stirring with a whisk. Drizzle lime juice mixture over corn mixture and toss well.
