Crunchy Romaine Toss

1 cup chopped pecans or walnuts (almonds would be good, too) - I use pecans and rough chop them
1 pkg. Ramen noodles, no seasoning pkg. - set aside the seasoning pkg. for another use
4 T. unsalted butter
Brown nuts and dry noodles (break up) in butter in skillet. Set aside on paper towel to cool.
Mix in a bowl:
1 bunch broccoli, chopped coarsely
1 head romaine lettuce, torn
4 green onions, chopped (whites and all)
Dressing:
1/2 cup veggie oil
1 toe of fresh garlic, minced or grated
1/2 cup sugar
1/4 cup red wine vinegar
1 1/2 tsp. soy sauce
salt and pepper
Mix well (I shake in a glass jar w/ lid).
For salad, toss at serving time all the noodle/nut mixture, greens mixture and 1 cup of dressing.
Keep rest of dressing in the covered jar in fridge.
