2 fresh pineapples OR 2 cans (13 ounces each) pineapple tidbits, drained
2 1/2 cups cubed cooked chicken
3/4 cup dived celery
3/4 cup mayonnaise OR salad dressing
1 teaspoon curry powder
1 medium banana, sliced
1/3 cup salted peanuts
1/2 cup flaked coconut
1 can (11 ounces) mandarin oranges, drained
Cut fresh pineapples lengthwise in 4 pieces each with part of the green top. Cube pineapple or use tidbits and combine with chicken and celery. Cover and chill. Mix mayonnaise and curry powder; cover, chill. To serve; toss chicken mixture lightly with mayonnaise, banana and peanuts. Fill shells or mound on lettuce; sprinkle with coconut and garnish with oranges.
