Greens with Mustard Vinaigrette

Mustard Vinaigrette:
2 tablespoons white wine vinaigette
1 teaspoon Dijon mustard
1/8 teaspoon salt
1/4 cup extra-virgin olive oil
1 head leaf lettuce or mixed greens
1/3 cup ripe olives, pitted and sliced in half
1/2 cup cherry tomatoes, sliced in half
3 tablespoons Parmigiano-Reggiano cheese, grated

Mustard Vinigrette: In a small bowl, combine the vinegar, mustard and salt. Whisk in the olive oil.
Wash the lettuce and drain well. Place lettuce in a large salad bowl. Add the ripe olives, cherry tomatoes and grated cheese. Pour the vinaigrette over salad and toss to coat. Divide salad among salad plates and top with croutons. Serves 4.
